Cinnamon-Sugar Glazed Pumpkin Seeds

I threw these together yesterday after we carved our Jack-O-Lantern and they were a HUGE hit!  We might have to butcher another pumpkin to get some more of these bad boys! They are very simple to make.  Here is the recipe:

pumpkin seeds (1 1/2 to 2 cups)
2 TBSP butter
2 TBSP sugar
1 TSP ground cinnamon

1.  preheat oven to 250 degrees, and line cookie sheet or baking pan with parchment paper or aluminum foil.

2.  remove any pumpkin pulp, rinse pumpkin seeds well and dry on paper towels.

3.  melt butter in medium sized microwave safe bowl.

4.  stir in sugar and cinnamon until well blended.

5.  add pumpkin seeds and stir to coat

6.  place coated pumpkin seeds in a thin layer on prepared baking sheet and bake at 250 for 45 minutes-1 hour, stirring occasionally.

  1. I made the above recipe. Actually my 15yr old did. They were great! The kids though, used to the old way we make them, with butter salt and worchestcher sauce, thought them too sweet. Go figure. They chow down on a ton of sugury halloween candy but find the above recipe too sweet? LOL. I LOVED them :)

  2. So glad you liked them Judy! We made some the "old way" too- I have never used Worcestershire before, what a great idea! I'll have to try it! I know what you mean about the kids, mine are funny that way too! LOL!
